Singhare ka atta chilla with potatoes and peanuts

Water Chestnut flour (Water Caltrop) or Singhare ka atta or Pani-phal flour is used in India during fasting period of Navratri festival or Ekadashi. I love the nutty flavor of Water Chestnut flour and it is full of nutritional content such as Vitamin B and C, Protein, Carbohydrate, Magnesium, Potassium and other minerals. It is also gluten free with glycaemic index of about 60. I love Singhare ka atta in any form, be it Halwa, Poori, Fritters or Pancakes. Presenting below my favorite Singhare ka atta Chilla (Pancake) with Potatoes and Peanuts recipe, do try, its super yummy!

Singhare ka atta chilla with potatoes and peanuts

Singhare ka atta chilla ingredients:

A cup of Water Chestnut flour (Singhare ka atta or paniphal atta)

1 cup of water

Rock Salt (Sendha Namak) as per taste

1 green Chili, chopped

2 tablespoon of chopped fresh green Coriander

Clarified butter (Ghee) or refined oil for greasing the pan

Singhare ka atta chilla Method:

1. Take Water Chestnut flour (Singhare ka atta), rock Salt (Sendha Namak), chopped green Chilies and chopped fresh green Coriander in a bowl.

2. Give it a whisk and add a cup of water to prepare a smooth batter. Keep it aside for 5 minutes. The consistency of batter should be smooth, thick and flowy.

3. Heat a non stick pan and glaze it with 1/4 teaspoon of clarified Butter (Ghee) or Oil.

4. Take 1/3 cup of the prepared batter in a Ladle and pour it onto the pan. As soon as you pour it, quickly spread the batter with Ladle by rotating and expanding it outward, till all the batter gets evenly distributed. Leave it till the edges starts to turn golden in color.

5. Flip it and cook it, till other side is also turned light brown

Delicious Singhare ke atta chilla or pancakes are ready to be served with spicy potatoes and peanuts or a fasting side dish of your choice.

Singhare ka atta chilla

Potatoes and peanuts for fasting ingredients:

One and half tablespoon of clarified Butter (Ghee)

1/3 cup of Peanuts (Moongphali)

4 medium sized Potatoes, cleaned, peeled and roughly diced

1/4 teaspoon of Asafoetida or Hing

1 teaspoon of Cumin seeds (Jeera)

1 chopped green Chili

1 and 1/2 inch of Ginger, peeled, cleaned and finely chopped

Rock Salt (Sendha Namak) as per taste

1/2 teaspoon of roasted Cumin seeds (Jeera) powder

1/2 teaspoon of red Chili powder

1/4 teaspoon of black Pepper powder

1/2 teaspoon of dry Mango (Amchur) powder

2 tablespoon of chopped fresh green Coriander

Potatoes and peanuts for fasting Method:

1. In a pan, heat Ghee (clarified Butter) or oil.

2. Once clarified Butter (Ghee) is heated, put Peanuts into it.

3. Saute Peanuts on medium heat till they slightly changes the color, which means they are roasted well. Immediately take them out from the pan and put them aside for later use.

4. In the same pan with clarified Butter (Ghee) in it, on medium flame, add Asafoetida (Hing) into it.

5. Then add Cumin seeds (Jeera) into it and saute them for 10 second.

6. Now add chopped Ginger and green Chilies into it. Saute them well for 10 seconds.

7. Now add Turmeric (Haldi) powder and mix it well.

8. Put Potato dices into the pan and mix it well.

9. Add rock Salt (Sendha Namak) into it and again mix it well.

10. Cook Potatoes on a medium flame, stirring occasionally, till all Potato cubes are cooked completely.

11. Once Potatoes are cooked, add roasted Cumin seeds (Jeera) powder, red Chili powder, black Pepper powder and dry Mango (Amchur) powder into it.

12. Mix all things together and cook it for a minute on a low flame.

13. Add, fried Peanuts into it and mix them well.

14. Finally garnish it with freshly chopped green Coriander.

15. Give it a final mix and cook it for thirty seconds on low flame.

Tasty and spicy Potatoes and Peanuts sabzi is ready to be served with fasting food of your choice, I love to have it with Water Chestnut or Buckwheat flour Pancakes or Chillas.
