Rava Nariyal Ladoo recipe with step by step pictures

Rava Nariyal Ladoo (Laddu) or Coconut Semolina sweet balls are made especially in Maharashtra region. They can be made anytime or on any festive occasion. These mildly sweet balls (Nariyal Ladoo or Laddu) have a great flavorful taste that is being enjoyed by everyone, especially kids.

Since childhood, I love these gorgeous Laddus and there are many variations of this dish. Presenting below a variation where fresh Coconut and Sugar Syrup (Chashni) is used to prepare these Laddus. This is considered as one of the many Maharashtrian ways of making these sweet balls. Do try it!

Rava Nariyal Ladoo

Rava Nariyal Ladoo Ingredients:

1 and 1/2 cups of Semolina (Rava or Sooji)

A  cup of Granulated Sugar

1 and 1/2 cups of freshly grated Coconut(Nariyal)

1/4 cup of Water

25 Raisins (Kismish)

12 Cashew Nuts (Kaju),  divided into four equal parts

4  Cardamom (Ilaichi)

3/4th cup of Clarified Butter (Ghee) + 1 tablespoon of Clarified Butter (Ghee) for frying nuts and raisins

Rava Nariyal Ladoo Method:

1.  In a heated pan on slow flame, dry roast Semolina ( Sooji / Rava ) for 3 minutes, stirring continuously. 


2. Now add fresh grated Coconut and mix it well. Cook the mixture for another 1 minute, stirring continuously.


3. Take the mixture out of the pan and let it cool down for few minutes.


4. In the same pan, put a tablespoon of Clarified Butter (Ghee) and put chopped Cashews into it.


5. Saute Cashews on low flame till they turn golden brown in color. Take them out of the pan once done.


6. In the same pan, put Raisins into the remaining Butter.


7. Saute Raisins on low flame till they turn golden brown in color. Take them out of the pan once done.


8. In a pan, heat 1/4 cup of Water and put Sugar into it.


9. Mix it well on low flame till sugar gets dissolved in water and form a very thick sugar consistency. It would require about 4 minutes.


10. Remove the syrup from the heat and keep it aside.


11. Put slightly roasted Semolina and Coconut mixture into a grinder.


12. Grind it to form a granular mixture with all the grated Coconut properly mixed with the Semolina.


13. In the very same Pan ( in which we sauteed nuts) add more remaining clarified Butter (Ghee)  and melt it on a medium flame.


14. Now add Coconut and Semolina mixture into the clarified Butter and Saute it on medium low flame stirring continuously.


15. Saute it continuously on medium-low flame, stirring continuously for about 6 minutes or till the mixture turns lightly golden Brown in color, then, switch-off the flame.


16. Remove seeds from the Cardamom pods and crush them to form a powder using a Mortar and Pestle.


17. Now add Cardamom powder, sauteed Cashews, and Raisins, Sugar syrup (prepared in step 10) into the cooked Semolina and Coconut mixture. 

18. Mix all things together. Keep mixing it till the mix becomes light and fluffy.


19. Grease your hands with a little Clarified Butter or Ghee (if required)  and start binding the Laddus (Balls).


20. Do not let the mixture cool down completely, it will help in binding the Rava Nariyal Ladoo easily. Bind it with your hand to form the spherical shaped ball.


21. Bind all the Nariyal Ladoos in the same way and keep them on a plate.


Absolutely delightful and divine to eat Rava Nariyal Ladoo are ready to be enjoyed anytime. They can be stored in Refrigerator for up-to 2 weeks but I am sure they will get consumed very quickly. The natural flavors of fresh Coconut give these Laddus a nice flavor, which is being loved by all age group.
